Oodles Noodles

This is a family comfort dish for me and my siblings. There are many versions of the recipe, depending on who is cooking the noodles.

For Z, I choose the simplest one, but not any less delicious.

(Yields 1-2 servings)

Ingredients:

1 serving of organic dried noodles (any type; e.g. soba, egg noodles, etc)
1 tsp of home-made shallot oil (with the shallots)
1 tsp of organic liquid amino acid/ light soy sauce
A sprinkle of chopped spring onions

Method:

Cook the noodles according to the instructions on the package. Meanwhile, heat up the shallot oil (without the shallots) in a pan over a low heat.

Scoop a spoonful the shallots and place it in the serving bowl with the spring onions.

When the oil is warmed through, pour it on top of the shallots and spring onions.

Add in the teaspoon of liquid amino acid or light soy sauce.

When the noodles are cooked, drain and place in the serving bowl. Mix thoroughly and serve.

Tip: Add in some organic vegetables (frozen or fresh) and a fried egg on the side to make it a feast for the little ones.
