A handful of organic red dates
2-3 large pieces of organic snow/white fungus
1/3 cup of organic barley
1-1.5 litres of water
Rock sugar/ organic honey to taste (optional)
Firstly, soak the snow/white fungus in a bowl of water for 10-15 minutes until it rehydrates and puffs up. Meanwhile, add the red dates and barley to the pot of water and bring everything to boil for about 10 minutes.
By now, the snow fungus would have softened. Cut it into small pieces and add to the pot of water, barley and red dates. Boil for another 5 minutes, before turning the heat down to medium low and continue to cook for another 20 minutes or so.
You can serve it hot or cold for the whole family.
I do not add any sugar as the red dates and the barley give a natural sweetness to the drink.
