200g chicken drumstick
A dash of corn flour (coating the chicken drum deep-frying)
3 Zespri Kiwifruit (diced)
Sweet and Sour Sauce (enough for 10 servings)
60g brown sugar
80ml white vinegar (add in once the above mixture is cool)
Tomato sauce - to taste
White sesame seeds
Marinate chicken drumstick with these ingredients:
¼ tsp salt
¼ tsp sugar
A dash of sesame oil
¼ tsp of five spice powder
2tsp corn flour
Bring the ingredients for the seasoning (leave out the tomato sauce for now) to a boil until the sugar is diluted. Set aside.
Combine the seasoning sauce with the marinated chicken drumsticks and set aside for 30 minutes.
Deep-fry the chicken drumstick coated with corn flour in hot oil till brown colour and is fully cooked.
Heat the wok and drizzle a bit of oil and add in the seasoning and enough tomato sauce (to taste) and bring to boil. Add in chicken and kiwi fruit and toss well. Garnish with coriander leaves and white sesame seeds.
